So our beloved pup Maisey had her first (technically 4th) birthday on Wednesday. Yep, our doggie is a Leap Year baby (how cool is that?)!
Since we only get to celebrate every 4 years (and we have an actual documented birthday unlike sweet Fletcher) I decided to go all out and make her a birthday cake that all of us could enjoy. I’ll be honest, the final cake wasn’t the biggest hit with the humans in the house, but Miss Maisey LOVED it.
Doggie Cake Recipe: (adapted from How Sweet It is- One Bowl Vanilla Cupcakes for Two)
- 2 eggs
- 4 Tbsp Sugar (I used brown sugar)
- 4 Tbsp melted Coconut Oil
- 1/2 C flour
- 1/2 tsp Baking Powder
- 3 Tbsp Milk
Preheat oven to 350 degrees. Mix all ingredients together. Either divvy up into 4 cupcake liners or one small loaf pan. For cupcakes bake for 10-12 minutes. For a loaf pan bake 25-30 minutes.
For the frosting I used peanut butter, room-temp butter and confectioner’s sugar. I didn’t measure it, just went by taste and texture. If it is too stiff add a splash of milk to get the right consistency.

And Maisey devoured her share! (PS- the decorations were made with craisins.)
